Our Products & Craftsmanship

What types of steel do your knives feature?
We specialise in authentic Japanese steels, catering to both professionals and discerning collectors. Our range includes high-performance Aogami Blue/Super (Blue Paper Steel) for exceptional edge retention, Carbon Steel for traditional sharpness, and stainless options like AUS-8, AUS-6, FC61, and Cromova 18 for durability and corrosion resistance. Each steel is selected for its specific properties to suit different culinary tasks and preferences.
Do you offer knife sets and accessories?
Yes. We offer carefully curated 2 or 3-piece knife sets for a complete start or upgrade, as well as specialised knives like Boning and Carving Sets. To maintain your investment, we provide essential ACCESSORIES including 1000 Grit Whetstones, Ceramic Water Sharpeners, Diamond Sharpening Steels, and premium Hasegawa cutting boards to create a complete kitchen ecosystem.
I’m new to Japanese knives. What should I consider?
Japanese knives are renowned for their precision and harder steel. Consider your primary tasks (e.g., general-purpose gyuto, delicate santoku), preferred balance between edge retention and ease of maintenance (carbon vs. stainless steel), and commitment to using appropriate cutting boards and regular honing/sharpening. Our website menu is organised by steel type and category to help you navigate. A 1000 Grit Whetstone is an excellent starting point for maintenance.

  • Store safely in a knife block, on a magnetic strip, or with blade guards.
  • Regularly hone your knife with a Ceramic or Diamond Sharpening Steel to maintain alignment.
  • Sharpen periodically using a 1000 Grit Whetstone or our Ceramic Water Sharpener to restore the pristine edge.
